Bright and zesty with a Mediterranean soul — a sunlit twist on a gin sour, kissed with orange and sea breeze simplicity.
- 50ml Café del Mar Gin
- 20ml Lemon Juice
- 15ml Orange Liqueur (e.g. Cointreau)
- 10ml Sugar Syrup
- 2 Dashes Orange Bitters
- Shake with Ice, Fine Strain into Coupe
- Garnish: Lemon Peel & Micro Basil
Ibiza Sunset
Layered and luminous, with soft stone fruit and citrus notes — like sipping the last rays of the day.
- 50ml Café del Mar Vodka
- 15ml Peach Liqueur
- 15ml Fresh Lime Juice
- 10ml Grenadine (poured last for visual effect)
- Top with Soda Water
- Shake vodka, peach liqueur and lime with ice, strain into an ice-filled highball
- Garnish: Orange Wheel & Mint Sprig
Signature Martini
Pure, chilled clarity with a soft citrus glow — clean, coastal, and quietly luxurious.
- 50ml Café del Mar Vodka
- 10ml Dry Vermouth
- 2 Dashes Orange Bitters (optional, to enhance citrus notes)
- Stirred Over Ice, Strained into Frozen Martini Glass
- Garnish: Expressed Lemon Twist (discard or drop, depending on dryness preference)
Coastal Cooler
Fresh, herbal and slightly savoury — a nod to Ibiza's coastal gardens.
- 50ml Café del Mar Vodka
- 15ml Dry Sherry or Fino
- 10ml Cucumber Juice
- Dash of Sea Salt or Saline Solution
- Shake and fine strain into coupe or rocks glass
